I have been watching the series called Lillie based on the life of Lille Langtry who was a Professional Beauty and compared to some of the others was not very nice- being known as a beauty corrupted her. Some were beautiful but had more stable lives. This is Edwardian England, before WWI, around Sherlock Holmes time. If we could forgo the corset wearing I think it would be glamorous to dress again like these fine ladies did- one fashion I havent seen again but might just take up. Here are some examples of real women from that time.

Dragonspyre

Continuing with my gaming adventures, I finally made it to Dragonspyre and have been going through the quests. The bad guys are harder. All the human ghost-like characters seem to have a Russian accent and names. I suppose Russia is hinted at as a country influence like Japan is for Mooshu and London is for Marleybone etc. I dkw where Wizard city is like. All the other places I pretty much can. Drayonspyre unlike the others doesnt have any real vegetation except some flowers which grow but no green really, lots of lava though, Lots more dungeons too, there are many in this world. I have not met Malistare yet but I will get there. There is alot to the world to explore and its not so easy to explore, you have to get access to the different areas a slightly different way. The big bosses are huge and have lots of mana so if you are alone- buy a henchman or two! I cant imagine defeating them alone. I hope they will add more to the game by the time I get through Celestia which I have visited but I have not gotten full access to. I am sure they will. Well thats my gaming report for now...

One of the passions for me and my husband is gaming. Its good that we both like doing this because then we dont often argue because one of us is on a game. Sometimes if something more important we might disagree but not really. Not like when my husband used to- used to play WOW.
He used to play it all the time. It would make it so when we were out, he had a hard time enjoying being out, he would think about going back and playing a dungeon.. I never went for that type of game. Until.... I clicked on a link on Facebook for Wizard101.. and now at 44 levels later- I am still liking it! Yes I am a married woman who plays a game most younger people like.- Amazing huh? Well only if you know me, do you know my age on there and no one knows me that well- I have not gotten friend codes from anyone- if I knew someone well enough I might give one but so far I have not quite met anyone who could fit that special privilege- couple of my friends there are nearly at that stage but not quite. No one in real life that I personally know plays so I am waiting to see how well a friend the ones I have gotten to know a bit are. However even if you arent my friend yet but would like to be and get the friend code (after I know you for a bit) Here are my requirements:

A) will you help me when I face a hard bad guy? B) will you stay when you get there- I hate it when a friend drops in my battle area brings in another bad guy then thinks- oh I am bored or something leaving me with more than I was wanting to battle- that is not right. I wish the extra bad guy would leave if they do but they dont. So if you help me- stay in the battle unless you get defeated and no one can heal. Sometimes we cant and its just the cards we have at the time, nothing personal. C) if I am helping you, let me help you how I want to help you, especially if you pulled me from somewhere else to help.. You want the boss fine- but only till the lesser minions are dead then I am attacking the boss too wither you like it or not cuz he/she is who is left. D) Dont tell me off for figuring out part of a quest puzzle which is MY quest too and dont try to solve everything if I asked you to help me. E) Very Important- in battle, unless your cards are all grayed out- dont just skip! Tell me you are waiting for pips for a bigger spell. Dont skip, skip, skip... and say nothing. If I am soloing I may skip to do just that but in a group I help- its teamwork unless I have to, no available cards. F) if you cant help me when I ask, tell me you cant dont just act like I did not say it, you know I did.
Tell me you cant, tell me you are fighting, just answer me. F) dont teleport to me just to be in that area- if you are coming to where I am by that way, help me where I am. I had to knock someone from my regular list because they kept doing that then accused ME of bothering them! The nerve! They kept going to where I was and I did not ask for them or even talk to them to help me and they didnt help that was the problem, I was just a jumping point for what they wanted to do- user!. Ok if you can follow my rules of being my friend to have a friend code ( I accept almost all for otherwise I am not picky I always like friend choices to choose from to help me) Then if you fit these requirements which arent asking much, just what I want in a good solid friend who gets a green name distinction rather than other friends- then look me up and I will add you for that for sure..

What I bring to the table......

A) I play often, pretty much daily for a period of time, I am not all day gamer, I am a wife too and and college student. B) I dont mind going to the first level areas and helping, dont be afraid to get me to help you on Triton Ave of something- I will, if not fighting somewhere. C) I will not ask you to help me in higher level places if you do not have the health to cope. I dont want you to be defeated quickly. If its something I know you can handle cuz where you are exploring at the moment like Mooshu like I am right now, sure I will have you help or if you are a world below from where I am. D) I will not help all the time in worlds I am not in yet- reason: too hard for me! I will try them out, try to help you but if know its hard because I have done that- I am waiting till I can really handle that area. E) I will say thanks and your welcome to any help you give me- if I forget- talk to me and make me remember- I am not intentionally rude. F) I am not a fair weather friend and dont like them- you help me, I help you. G) I will never ask for crowns, gifts etc- you dont have to give me anything- just your help and friendship. Lastly I am female I have a alternate guy one but I play my girl the most- however I accept friends who are male or female- it matters not to me if you are just playing a girl but are a guy really or the reverse. I am not a girls only person or boys only person- to me your are my friend in the game, I only know about you what I tell you and you only know about me what I tell you- dont want to say your age - no problem I wont be asking.

Dont be surprised if I dont talk alot, I usually dont talk to people a great deal in games but if you say hi, I will say hi, if you ask about a quest I will talk you about it, but I am quest- focused alot.

Spring!

Wow ! Time goes by when you are not thinking about it! Out of winter we are- I think and Spring has come. Like the picture up above? I do too, it has a springlike setting so I decided to put it in my blog, Its me in about 2004, I cant exactly remember where, a park in London though. We have been busy with our garden. Simon and I bought blueberry, raspberry, blackberry and strawberry plants. We are going to have quite the jam! I need to study up and learn how to make jam. School is marching on as usual, Simon is finished in Oct and me in Jan.
In addition to our berry plants we are hopeful that our fruit trees will give us fruit this yr- they have the flowers this year as last year they did not. So we shall see, this year or next for sure I think. We also have peas, and cabbage, and cauliflower and Lots of Romaine! We got a whole flat of them and so we shall have plenty to eat, share, and maybe sell even. We also have 9 chickens which are growing so fast! 3 kinds, 3 of each. It will be a group project to make them a chicken coop which they are just about ready for. We enjoyed General Conference earlier this month. I got to watch it at my Grandmas house with my Mom and my aunts Debbie and Margo. My Aunt Christine was in Hawaii where one of my cousins, she and my Uncle Wayne's boy graduated from BYUH and another got married in the Hawaii temple. All her boys got to be there, Jared her third oldest and his wife, little girl and baby to be live there too. The Hawaii Temple is special to me because I got my endowments there when I was 21. I was a lucky girl too because I did not meet the usual qualifications to get your endowments at that time. I was not graduating, I was not going on a mission, I was not getting married. I felt though it was the time to do it. I didnt know I would get married and I didnt want to go years without being able to fully partake in what is done in the temple. I was fortunate to have a bishop who agreed with me I was able to. I wish I could go back and see what it looks like now that it has been refurbished.

Greetings and Happy Thanksgiving.... This yr Simon and I will have our own Thanksgiving. My folks went to see the darling baby Fox and his darling parents..in North Carolina. My other two brothers are feasting with their in laws.. So its just Simon and myself. Christmastime will be a a party scene though. We got a pile of snow yesterday- we thought we were going to get blizzard, but we didnt. We got lots of snow though!

Adjustments- Simon gave up voluntarily the job he has not liked but has faithfully gone to for a yr- make that two yrs he worked there before as well. He was not happy there at all, and now he is free of it.
He now works for the college we both go to as a online mentor-paid position.
He could not be happier. This is an adjustment for me as I am used to him going to work for a certain hours of the day, now his work is right at home. I find that I dont have to do-do- all day before he is home. I can decide what I want to do like I normally would but get it done when I get it done. Still being productive, but less feeling of " I gotta show him what I got done today." feeling- he is at home, he can see what I do and if I need him - there he is. Plus if I need time to just be on my own I can do that too without feeling I should be getting such and such done. He still goes into college for classes so I get time then to do anything on my own or with my folks while they are with us ( at least over winter) So better all the way 'round I think. Hope everyone has a a very wonderful Thanksgiving!

Gibby was defeated and Maple Mountain was saved because the people in the town voted No! to his plans to develop on our beautiful mountain. Yeay Mapleton!

Its a bit into October now and the weather is finally starting to look like it too. Cooler and drizzly, beautiful colors of the leaves and on the mountains. Even talk of (gasp!) snow! On the mountains.
My cute baby nephew was born on October 4th- My brother Chad and his wife Tanya's little boy, their first baby. Here are some cute pictures of him. His name is Fox Alma Everett- yep Fox.

He is number 10! grandkid/nephew/niece! We are so happy he is here and cant wait to meet him.

The Amazing ASEA

A little while ago- my Mom started telling me about this product ASEA. ASEA is a product which helps your body normalize the cells in your body. It comes in bottles kinda like your Arizona or Zango size- see above. A first taste it taste a bit salty, almost like you had some sea water. However it does more for you than plain salt water can do. I have had dry, cracked heels for months, and lotion was not healing them very well no matter how much I put on. Carly's Easy Veg Beef Stew

Move over Dinty Moore, I have a stew which is just as good.

1 can of beef broth
1 can of Campbells or Western Family Vegetable Beef soup
add 1 can of water to each
2-3 medium potatoes, any kind you like
handful of carrots chopped
half a tube/package of ground beef
any other veggies you might like
Just for fun- a handful of pasta shells, spirals or macoroni
A couple of squirts of ketchup or you can put diced tomatoes if you want.
Brown beef, separate in to small pieces.
Add ingredients
Stir every so often
Add herbs if you wish
Cook till potatoes are tender

Serve...

It was interesting you always come across someone chatty at the graveyard it seems, especially on memorial day etc.. a lady was looking at the graves of her husband and brother- she said I dont know why they died- in her hands were cigars, she was wondering where to place them, I wondered if they had any effect on at least one of their passing- Sad she obviously didnt have the gospel.

Then there was a polynesian family who made it a family occasion they had their guitar and were dressed traditionally with those lava-lavas I think they are called- skirts things the men wear and were singing tunes by their loved one . They were not overly sad, but had an understanding of death. It was an interesting contrast.

Today Simon and I visited our loved ones who have departed.. The grave-yard looked so pretty with all the
flowers.

Uncle Ole's grave, we put the bouquet of wildflowers and small flag.

New Layout

I got tired of my old layout so I chose an another. I think I like this one better actually. Weather has been good although we did get snow last week which was not nice, luckily it only stayed for a day and did not come back. Garden seems to be doing ok, never did get any carrots showing, perhaps I started them too late. Other things are doing well though. In school things are rolling along and I am doing well in my current Flash class, its alright its not the only one I will do. There is another more advanced class I will take at some point. In sad news my Grandmas second husband passed away. Bill Tate had been ill for awhile. They had 10 good years together. He lived a remarkable life, a fighter pilot, a POW, a construction equipment inventor, many things. He will be missed, I am glad I can say that I got to know him a little, being down in St George I didnt get to go there alot but I did go a couple times and I am glad for that.

Been working in the yard lately, got some tomatoes, carrots, lettuce, peas and beets in. I have beans which are doing amazing inside to transfer. I plan to start alot of things indoors first then plant them outside. I am hoping all will do well. I have been giving them a plant food treatment every 2 weeks. We now have two fruit trees, an apricot and a cherry. The hyathinths are coming to the end of their season. I have enjoyed them. School going as usual- just got 2 A's in my last 2 classes :) This module Simon and I have the same teacher! Not often that happens. Simon is doing well also in school. He is still at the call center but he is hoping to get out of it and into a different job soon.

April comes in like...

Well we are into April now, we have planted a few things, a tree ( more to come) some tulips and daffodils , a bleeding heart which will grow up tall if allowed to grow well. We have also planted a rose and few pansies in addition to my garden. I am waiting a little to put in my tomatoes I have grown inside since March. The snow keeps wanting to come back though and I am quite ready for it to go away. I am tired of it being cold, I am ready to wear lighter clothes and enjoy the sunshine. School is going well, classes are going well. I am pleased how I am doing.

Pasta with Bacon and Cauliflower

Serves 4 Hands-On Time: 30m Total Time: 30m

Ingredients

12 ounces spaghetti (3/4 box)
6 slices bacon
1/3 cup fresh sage leaves
1 small head cauliflower (about 1 1/2 pounds), cut into small florets
kosher salt and black pepper
3/4 cup grated pecorino (3 ounces)

Directions

Cook the pasta according to the package directions. Reserve ¾ cup of the cooking water. Drain the pasta and return it to the pot.
Meanwhile, cook the bacon in a large skillet over medium-high heat until crisp, 6 to 8 minutes; transfer to a paper towel–lined plate. Crumble.
Add the sage to the bacon drippings in the skillet and cook over medium heat, turning once, until crisp, 1 to 2 minutes; transfer to the paper towel–lined plate.
Add the cauliflower, ¼ cup water, and ¼ teaspoon each salt and pepper to the bacon drippings in the skillet and cook, covered, for 2 minutes. Uncover and cook, tossing frequently, until golden and tender, 3 to 4 minutes more.
Add the reserved pasta water and ½ cup of the pecorino to the pasta and toss until creamy. Add the cauliflower, sage, and bacon and toss. Sprinkle with the remaining ¼ cup of pecorino.

New Month/ Reflections on the past

January has finally passed. Classes go on as usual. I have never gone through so much information so fast. Back at BYUH I had a few months time to get though classes. Now I only have a month with 1-2 classes. I am actually going to graduate- 2012. I never got to finish BYUH, looking back I wish I had. I would of gotten closer anyhow if I didnt leave when I did. I was there through the lucky circumstance that my father worked for the government and that is were he had gotten his next chosen assignment. Its been a good while since I have been there- and I have to say I loved with a captial L those 5 yrs. It wasnt just the sunny days, the beaches, the activities at school.
It was the people many who I still know, and are still my friends that I met. After I left I went to UVU for a month- what a cold contrast! It was cold a) because it was winter anyways b) the people had the people they hung out with already- kinda like English school which I have also experienced. My only "friend" was a guy who never shut up it seemed and that was just in Archeology class. Now at my current school I dont have alot of friends because I am online but my life is now different anyways. I will celebrate with Simon 7 yrs of marriage this year. It has been a packed 7 yrs, from being in England- London for 2 yrs, getting deathly ill due to ignorant doctors, coming back to the USA Simon getting through immigration, moving, getting deathly ill again ignorant doctors ( no way would I do what they did to me) moving again, coming to live with my grandfather- he passing away- going back to school... yeah pretty packed. In 2010 I still have health problems but not like before, no hospitals this time and I plan to keep it that way.

Simon has decided to go to campus and then on to work each day- he was online like I am now.
I prefer as long as I can to be online giving me time to do everything else- run the house basically. He worries about having free time. I know it will be less but he will get it.
If he stays the course he will be able to leave the call center which is so-so and into a good job.

Birthdays celebrated last month:

My dad- turned 62.
This month my sister in law and my aunt will have birthdays.

Oven Fried Chicken

Ingredients

Cooking spray
1 1/3 cups crispy rice cereal
2 1/4 cups bagel chips or Melba toasts
5 teaspoons extra-virgin olive oil
3/4 teaspoon hot paprika
Kosher salt and freshly ground pepper
1 1/2 cups plain Greek yogurt (2%)
1 teaspoon dijon mustard
4 skinless, bone-in chicken thighs or halved bone-in breasts (about 6 ounces each)
2 bunches scallions
Harissa, chili sauce or ketchup, for the sauce

Directions

Preheat the oven to 475 degrees F. Set a rack on a foil-lined baking sheet and generously coat the rack with cooking spray.

Finely grind the cereal and bagel chips in a food processor and transfer to a large resealable plastic bag. Add 3 teaspoons olive oil, the paprika, 2 teaspoons salt, and pepper to taste and toss.

Whisk 1/2 cup yogurt and the mustard in a shallow bowl. Add the chicken and turn to coat, then transfer to the bag; seal and shake to coat. Place the chicken on the rack and mist with cooking spray.

Toss the scallions with the remaining 2 teaspoons olive oil and place alongside the chicken. Bake until the chicken is crisp and a thermometer inserted into the thickest part registers 160 degrees F, about 30 minutes.

Make the dipping sauce: Mix the remaining 1 cup yogurt and harissa to taste in a bowl. Serve the chicken and scallions with the sauce.

Together forever at last

Today after waiting 70 yrs my grandparents were sealed together, my grandfathers work was done as well, the sealing being the ending final step. It was a very special day for my family, My dad got to be sealed to his parents at last, after waiting 62 yrs. Now its like he always was. My brother Joe got to be with us as well. I can only imagine what my grandparents must be feeling.
I know they are happy though. Now they really are mine and all the ones who went before them are mine too.

Rachels Birthday

My niece Rachel just turned 14! We had fun as it was also New Year's Eve

John was I guess used to Christmas still he wanted a present to open for him! Judith had to wrap up something fast so he would be happy- which worked, for now.When Simon took his turn at Taboo he really got theatrical. It was fun to have Chad and Pancho there. Kirsten was there as well. Rachel got to go to her first dance which from what I gather just wasnt so hot? Dont worry there are many dances yet to come which I am sure will be more fun.

Yummy Recipes

Asian Dumpling Soup

Ingredients

Serves 4

4 scallions, white and green parts only, thinly sliced
6 cloves garlic, thinly sliced
1/4 cup peeled and slivered fresh ginger
2 cans (14 1/2 ounces) reduced-sodium chicken broth
8 ounces shiitake mushrooms, stems removed, caps halved and thinly sliced
1 package (15 ounces) frozen stuffed dumplings
1 can (15 ounces) baby corn, drained (1 2/3 cups)
2 bunches watercress, stems trimmed (4 cups)

Directions

In a medium saucepan, combine scallions, garlic, ginger, and 3 cups water. Bring to a boil and cook, partially covered, for 10 minutes. Add chicken broth and mushrooms, cook until the mushrooms begin to soften, about 3 minutes.
Add dumplings and baby corn; boil until dumplings are tender, about 4 minutes. Add watercress, stir until wilted, about 30 seconds. Spoon into bowls, and serve immediately.

Shrimp Tikka Masala
2 tbs EVO ( extra virgin oil)
1 large onion thinly sliced
3 tbs grated peeled fresh ginger
1 tbs of grated garlic
2 tsps tomato paste
2 tsps garam masala
1/2 tsp chili powder
1 cup of water
20 large shrimp peeled and de veined
1/4 plain yogurt
salt and pepper
Heat oil in stock pot or dutch oven medium heat Cook onion till golden ( about 20 minutes) add all but shrimp and water and yogurt- cook for about 3 minutes. Add shrimp and water. Cook for 4 minutes. Stir in yogurt. Season with pepper and salt.
Serves 4 double for more than 4 people.

Christmas

Here is a yummy dips for Turkey day and the holidays- by Bobby Flay and Real Simple

Disappearing Buffalo Chicken Dip

2 cups of diced or shredded chicken
1/4 cup cayanne pepper sauce
1 cup mayo
1 cup cheddar cheese
2 tsp finely chopped green onion ( optional)
1tsp lemon juice
1/4 cup crumbled blue cheese

Preheat oven to 375 degrees. Toss chicken with cayenne pepper sauce. Stir in other ingredients, then sprinkle blue cheese on top. Bake un covered for 20 mins or till bubbling. Serve.

Creamy Salmon spread

8 ounces of cream cheese at room temp
2 tsp of horseradish
2 tablespoons of fresh dill
1/4 pound smoked salmon- chopped
Serve with crackers or veggies

In a small bowl combine all ingredients
add 1/2 tsp salt and pepper
This can be made and refrigerated a day in advance ( just one though!)

Semesters keep marching on.. doing good so far, Simon is doing a tad bit better than me He is on the Deans list. He did not have trouble with a couple of his teachers like I did though. My GPA is still past 3.0 ( 3.38) so I am happy and I am working to get it better and better. Here are a couple nice recipes for Fall. From my very favorite mag Real Simple

Garlicky Mashed Potatoes with thyme.

Ingredients

4 pounds Yukon Gold potatoes (about 8), peeled and halved
kosher salt and black pepper
1 cup whole milk
1 cup heavy cream
4 tablespoons butter (1/2 stick)
1 head garlic, halved horizontally
12 sprigs fresh thyme
1/8 teaspoon freshly ground nutmeg
Serves 8

Directions

Place the potatoes in a large pot and add cold water to cover. Bring to a boil and add 2 teaspoons salt. Reduce heat and simmer until tender, 16 to 18 minutes. Drain the potatoes and return them to the pot.
Meanwhile, place the milk, cream, butter, garlic, and thyme in a small saucepan and bring to a boil. Set aside until the potatoes are cooked.
Strain the milk mixture into the pot with the potatoes. Add ¾ teaspoon salt and 1⁄4 teaspoon pepper and mash. Sprinkle with the nutmeg before serving.

Maple Pumpkin pie
1 pie crust
2 large eggs
1 15 oz of pumpkin puree
1 cup of heavy cream
1/2 cup of maple syrup
1/2 tsp of ground cinnimon
1/2 tsp ground ginger
1/2 tsp salt
1/2 ground cloves

Set oven rack in lowest position, heat oven to 350 degrees
In a large bowl pour mixture into crust, bake 60-70 minutes
Let cool before serving.
Serves 8

Another semester has come and gone, this time it was online, an alright class but nothing I did was really worth posting as it wasn't as nifty as other stuff in the other classes I have had. My parents came back for a little bit, mainly for my Uncle Orlando's funeral, which was a shock to everyone I think. He had his troubles but no one was predicting his passing so soon. I am so proud of his daughter Mckell who has coped so amazingly and keeps carrying on, doing great things. I know her Dad is proud of her, especially now. Simon finally got back into work after a bit of a space of not working, school helped fill the space but church mice we have been for awhile getting the little state help we can plus my parents have been amazing and have sent us bits every week to keep us going. Simon hopes to secure a better job soon as Macdonalds isnt giving him the hours he needs and he has the skills to do more than flip burgers and stuff.
Lets hope that happens soon. He has started working in the temple. something I think which will be good for him. I am pondering wither I should join him, I am not sure. I have been recently diagnosed with asthma after coughing for over 3 months, I am still trying to get it under control.
I will have to take the route one should take when making a decision like that. I plan on going to the temple still, but I am thinking for now, I might like the option to stay home if I would like, largely do to health reasons and I wouldnt want to let anyone down. I havent finalized that decision though. My parents are heading back tmw or Sat. I hope they wont have to be gone so long this time. I hope I am not too unique in saying I like my parents around, and yes sometimes right on top of each other is not so bad sometimes. I have no clue as to how long we get to stay in this place I call home now- it is no secret it will be sold at some point. Where to next and when? I try to to think about it too much as what will be will be alright but it crops up in my mind though all the same. Fall is approaching. officially a little ways off still but its on the horizon, nighttime already getting cooler. I am ready for it- really for the cool- not exactly ready for the cold though.

Yes I know there are 4 pieces that is because I changed my mind and did two for Movement- one of the elements of design. Another semester ends, I think I did pretty well in these two classes- I would put the work from the other class but is in a different format that this site doesnt seem to like...

Well I have done 3 design classes now so I thought it would be a good idea to show off some of the things I have done. Click on them if they seem to be cut off and you will see the whole picture.

This is Kevin Whately, he has been in a few things but is most noted for being Inspector Morse's right hand man which then led him to have his own series, Lewis which is the the name of his character. I did this in my Illustrator class as my final project.

This is Wedge and he is my creation and has
been for many years. Years ago, my father had
a hernia and had to sleep on a wedge. I was
about 14 and had never heard of anyone sleeping
on a wedge, and thought it was funny and so I
began drawing wedge as if he were a person often
drawing my Dad in too. My parents love my
Wedge cartoons.

This is my very latest project I didnt take the photos, but I arranged them and the text.
This was done in my Photoshop class.

This is another one of my designs done in Photoshop class I drew the kitty and made it into a brush.

This semester was not as easy as the last few have been, not so much the assignments but the teacher I had. I had done the first of 2 assignments and posted it on the student network as I have done for everything else, when my teacher came back and said he could see them. OK maybe something was wrong. I changed my browser to Firefox ( on my Mac) and after that I was able to see my work fine. However he could not. back and forth went emails- he always saying it must be my fault, I must be doing something wrong and he wasnt that nice about it. I had to go to the school and have my school counselors intervene I tell you in all my school years I have never had this problem before. Well miraculously he suddenly could see my work and graded it- what I was mainly concerned about. But an apology? I-am-sorry-it-was-my-fault? No, no sign of that. He played it off as if I finally got it right even though I knew I had all along. Next semester we are going back to school, nights. No more with dealing with online teachers. We tried it when we had to fit in with Simon's schedule but we dont have to do that anymore. In other news we have been getting sooooooo much rain. Our crops love it and we are so proud of our little garden.
Simon and I celebrate our birthdays this month. We went to the Oqiuirrh Mountain Temple.which was very nice despite the rain.

New Semester another one gone by

Well another semester has come and gone. I tell you I have never done school so fast. I had Logic and Illustrator this time and I think the grades will be a B + and and A-, the A being in Logic. Pretty happy with that. I learned alot about Illustrator and feel more comfortable with it now, considering I never used it before. Simon did well too I think he scored a couple of A's this semseter in his classes so things are going well in that direction. Our garden is starting to show promise. I am starting to see the things I planted and the tomatoes seem to be doing well also.
Simons plants are just starting to breach the surface. I hope they will do well also. Overall things are going ok. Money is rather tight but I know if we budget and budget well we will be ok.
Simon is going to start his business up again soon and hopefully he can get some added income from that, which would be nice.

Spring!

Its finally spring here! At least all signs seem to point to it. Lovely sunny days we have been having the past few days. Another module at school is coming to end and boy am I glad. OK I am not great at math- really not great. Its never been one of my strong subjects. I just dont "get" it.
But to ad insult to injury we have had a rather unhelpful teacher. Its all online, so I cant really get help - if there has been any I haven't known where to get it. I will be happy if I get a C- good news is next time I dont have to take any math. No more math for me. Yeay! I am getting an A in Marketing though which I am very happy about. The flowers are coming up so nicely in the yard, they are so pretty to see.

Here is a simple recipe for a drink I have come to love. Raspberry Lemonade

Combine 10 lemons
2 cups raspberries
1/1/2 cups of sugar in a large pot
Pound mixture firmly with the end of a rolling pin,extracting as much juice as possible for 10 mins,
stir in 6 cups of water. Pour through a sieve into a large bowl. Press lemons and raspberries till all juice is extracted. Discard all solid material. Serve over ice. Makes 9 cups.

Sweet Pear and Apple Salad wirh Endive

From Martha Stewart Living- Jamie Oliver's Recipe

4 heads of endive a mixture of red and white washed and dried
2 apples cored and julienned
2 pears cored each cut into 8 wedges
A handful of soft herbs like chervil. tarragon, parsely- roughly chopped plus more for serving
2 ounces of blue cheese
1/4 cup od creme fraiche
5 tablespoons of extra virgin oil plus more for drizzling
4 tablespoons of cider vinegar
6 tablespoons of water

Method:

Place endive in a large bowl. Add apples, pears, herbs and set aside.
In a blender or jar combine blue cheese, creme fraiche, olive oil, vinegar, and water blend until smooth- about 16 seconds
Pour about 3 quarters of the blue cheese mixture over the salad, toss to coat. Divide evenly amoug 4 plates and drizzle a little more deessing and olive oil over the salads. Sprinkle with herbs and serve.
Enjoy.

My how time flies! Already nearly out of March. Well since I last posted Simon and I have just about finished our first course at college and we both are getting A's. Yep doing really well considering I knew nothing about Management but I do now! I have enjoyed my teacher Papaloa who is Samoan but he grew up mainly in New Zealand. We are really enjoying college. We get to have the same classes together next term, I guess the next term after that we will finally branch off and have classes separately in our degrees. In other news, Simon got a new job. His old job was not treating him right and so he quit before they had a chance to fire him which is what they were trying to find ways to do anyways. So far he likes his new job. Simon also got his GED, being from the UK they do not give you a diploma until University level so he didn't have proof he had high school level education, but now he does and he did quite well considering he had no preparation.
I am quite proud of him and all the faculty at our college is too. I have heard from Chad, sometimes it takes awhile but so far he is doing well and is fine. I cant wait till he is able to be home again. My brother Joe is having a birthday in the next few days. Happy Birthday Joe!

College Bound

Well the month is just about over but Simon and I decided to do something which will benefit us in the end a great deal. We are going back to college. For me, its back to school but for Simon it is the first time he has attended college and especially here in the U.S. Next week is the start of school. We are both excited. I will be doing a Graphic Arts degree and Simon Business Admin. Our first class will be together but of course not all will be. We even get a free laptop to first use during our study and then keep when we graduate- pretty good incentive right? Books are free too which will be nice. I have paid for college books before and it isnt fun but you have no choice. The staff have been amazing, they have really done all the paperwork fast and worked hard to get us all set up. It is a little more pricer, the student loans we will pay off but at the end we will have all we need to get a job wither for ourselves at home or working for someone else. This will be good for Simon, just what he needs- he doesnt want to work at a call center all his life, he wants a proper job- his current job is alright- better than being a cleaner or fast food but still, he doesnt love it. I have worked before but not since my last time at college in 2001. I have been wondering what to do with my life, and this is it. I have wanted to finish the education I started to get. Its different than I choose before but it is something I like and would like to do as a living.
So wish us luck! We are excited!

February Happenings

Well this month Valentines came and went, we didnt have much cash so our Valentines day was very simple. We got each other something we wanted and called it our treat. I also made Simon a handmade card. It wasnt much but its the thought that counts right? My nephew got baptized, first of the boys to be. It was a nice occasion. My cousin will be coming home from S Africa this week. I am sure he will be glad to be home. He gets to be whisked off to Hawaii to spend time with his brother who is already there with his wife. We have gotten alot of snow, it keeps coming down and then dissappearing only to be back again the next week or so. Simon got a new work schedule Horray! He finally gets Sunday's off. This is very nice for us.

February's Recipe

Growing up I wasnt a keen fan of Split pea soup, but over the years I have grown to like it. This recipe I found in Martha Stewart Living.

Split pea soup- Serves 6

8 black peppercorns cracked
3 sprigs of thyme, chopped - with extra for garnish
2 sprigs of flat- leafed parsley " "
1 dried bay leaf
2 tablespoons of safflower oil
2 medium carrots cut into 1/2 inch pieces
2 celery stalks cut into 1/2 inch pieces
1 large onion cut into 1/2 inch pieces
2 tablespoons of minced garlic
1 ham steak cut into 1/2 inch pieces
1 1/2 teaspoons of salt
1 pound of split peas
8 cups of water

1. Wrap peppercorns,thyme, parsley and bay leaf in a piece of cheesecloth and tie with twine.
2. Heat oil in a large pot over medium heat add carrots, onion, celery and cook until onion is translucent (see-through) for about 9 mins, stirring occasionally. Add garlic, ham and salt and cook for 3 mins. Add spices in cheesecloth ( dont untie) , split peas and water.
3, Bring soup to a boil, Reduce heat and simmer, stirring occasionally until peas are tender- 50-55 mins. Take out spices in cheesecloth. Season with a pinch of salt and garish with the fresh herbs.

Serve- this soup will keep in the fridge for 3 days.

January Recipe

Once again my favortite magazine, at least at the moment has come through with some yummy recipes. Here is one which is heart healthy.

Chicken with roasted sweet potato salad.

Prep time: 15 mins Total time 30 mins.

2 sweet potatoes- peeled, cut in thin wedges
1 red onion- thinly sliced
3 tablespoons of olive oil
Kosher salt and black pepper - think reg salt will do as well.
4 6 ounce boneless, skinned chicken breasts
1 bunch of spinach- stems removed
2 tablespoons of lime juice

Heat oven to 425 degrees. On a rimmed baking sheet toss potatoes, onion, olive 2 of the tablespoons of olive oil, 1/22 teaspoon of salt, 1/4 teaspoon of pepper. Roast till tender for 20-25 mins.

Meanwhile, heat the remaining tablespoon of olive oil in a skillet, over med-high heat. Season the chicken with 1/2 teaspoon of salt and 1/4 teaspoon of pepper. anc cook till browned- 5-6 mins per side.

In a large bown toss warm potato mixture with spinach,lime juice and 1/4 teaspoon of salt.

Serve with the chicken- Serves 4- to serve more simply double the recipe.

Some sad news...

Some sad news, on Jan 4th, 2009 My grandpa Blake Harley Everett passed away. He was 92. For the past year my parents, Simon and I have been looking after him at his house. My brother Joe and also his wife also got the opportunity to help him, for many years. He and my Grandma married in 1938, they met when my Grandma was in the 9th grade. It was a real sudden passing, there was no indication that he would be leaving us that day or even that week. We had gone to Denny's ward to see Jonah, Denny and Catherine's 3rd son be blessed. My Grandpa loved to fish and hunt in his younger years, was an avid football and basketball fan up until his last day. He was a hard worker in his job at the pipe plant for 37 yrs and also was a very good farmer. He always had a project, if not for himself, he had one for us to do when we would visit. He is now with my Grandma who he has missed dearly for almost 20 yrs. I can't imagine how happy he feels now. To any of my relatives who may read this, we are thankful for all the kind words and deeds you have done for us at this time. I shall miss my Grandpa, but I know he is thrilled to be with his wife and family again.

Well, Well a new year is here! Here in Utah in the valley we have gotten quite a bit of snow. Its not done yet! Our family had a enjoyable Christmas, Simon and I went over to Joe's on Christmas Eve and also on New Years Eve. We were missing Chad who is on assignment overseas. We were happy to get a email from him though. Gosh, what will 2009 bring? Its tough to say at the moment. Let's hope our new president will do some good for the country. I really don't know how things will go, but I dont think anyone does at this point. I have been in Utah a year. In my Grandpa's basement where I started when I came here. Of course I have been here several times all through out my life but this is the first time it was where I lived since I was really small. How long will Simon and I be here? I am not sure at this point. I didnt set any resolutions this year, I haven't sat down to think of any, I have heard some 'experts' say its not good for your health to do. I don't about that. There are things I would like to do better and I am keeping them in my head. My parents will be in Iowa for a bit to take care of a bit of problem but hopefully they won't be long. While they are gone Me, my husband and my brother Joe will be checking in and taking care of my Grandpa. He is still quite independant at 92 years old. This is good because he can still do many things for himself still but not everything so between the 3 of us we shall make sure he is well looked after. This will be the second time for a long time I have and about the 5th time total for me looking after him. I look forward to Spring, its a little ways off but still I look forward to it.

LIghts, Camera, Happy Kids!

For my nephew Adam's 4th birthday, Mom, Dad and I took my brother Joe's boys to Thanks giving Point to see the Christmas lights (Denny and his family were there also, in their car) With a $2 dollar off coupon we got to see them for $5 dollars ( per car) instead of $ 7. Brigham and Blake had a blast! They LOVED the lights. They were shouting Merry Christmas! as we drove past people, and looking at every single light display we went by. Blake kept saying " I wish Christmas Eve was tonight!"
Oh to be that young again! When lights dazzled us and we believed in Santa Claus.
After the lights, we went and saw some reindeer which were in a pen, the kids were interested in those also. Finally, we went back to Denny and Catherine's to open presents and have cake and icecream. Overall, it was a great activity. Everyone had a good time.

News.. Updates...

Since my last post, a few things have happened.. Thanksgiving for one. My husband and I and my parents went to my brother Joe's house for Thanksgiving. It was a lovely dinner, everyone did something for the meal. There was just the cosy bunch of us there. A competitive game of Scrabble was played afterwards. On Sunday was my Moms birthday. I won't reveal her age. Dad took her out to Red Lobster. They also went on a wonderful ride, around Goshen and Bursten Pond which I have actually swam in. The kitty in the picture thought my parents could not see it but as you can see they could! Joe had a nice Thanksgiving concert at the Provo Tabernacle last month also. It is a lovely building, I had never been inside. 4 choirs participated including a childeren's choir. The place was stuffed to the raffters, very well attended. My Mom told me that she used to go there for Stake Conference. I have a camera now, I just got to get the software for it ( as it was my Mom's and that Cd is in Iowa) but as soon as I do I can post some of the pictures I have taken so far. I have begun my Christmas shopping, infact 70% of it is already completed and I am quite happy about that.

New stuff I like

As you know I am quite a P.D James fan, and finally a new book has come out. I haven't had a new book written by her to read since 2005 when The Lighthouse came out. I am hoping they will make the movie to go along with that as most of her books have had a movie made from them. I shall have many hours of reading to look forward to wit this new novel. Her books are complex, multi - layered with characters who are anything but ordinary. P.D. James manages to bring in all the elements of mystery and murder, but refrains from excess gore. Detail is there, but not the excessive horror some writers put in their books. She is not afraid to put in some adult topics so if you want mysteries which don't broach anything close to that, stick to Agatha Christie type books where the stories and plot are more simple. However I find even with those themes, I can still enjoy the novels because they are tastefully written. I plan on doing a review of what I thought of the book after I have completed it.-Stay tuned for that..

This November one of my favorite music artists who is featured on this page brought out a new CD, like PD James Enya only produces a new work every few years so a new one from her is welcome too. And Winter Came is a Christmas themed CD, although not every song has a Christmas feel to it. I have listened to it a few times and find it very enjoyable. I plan to listen to it more during the Christmas season. If you like New Age, then you will like this CD. I am always on the lookout for things I like to have new editions or albums. Well I am off to tuck into my book. .

November's Recipe

Normally, I am not a fan of things made with pumpkin, but this
recipe sounded interesting...

Pumpkin Cheesecake

For the Crust
2 cups graham cracker crumbs (from 14 graham crackers)
2 tablespoons granulated sugar
1/2 cup (1 stick) unsalted butter, melted
For the Filling
1 .25-ounce envelope unflavored gelatin
1 8-ounce bar cream cheese, at room temperature
1 15-ounce can pumpkin puree
1 cup sour cream
3/4 cup granulated sugar
2 teaspoons pumpkin pie spice
1 teaspoon pure vanilla extract

Make the Crust
Heat oven to 400° F. In a medium bowl, combine the graham cracker crumbs, sugar, and butter. Transfer to a 9-inch springform pan. Using a straight-sided dry measuring cup, press the mixture into the bottom and 2 inches up the sides of the pan. Bake until set, 8 to 10 minutes. Let cool.

Make and Chill the Filling
Sprinkle the gelatin over 1/4 cup boiling water. Let stand, stirring occasionally, until dissolved, about 5 minutes.

Using an electric mixer, beat the cream cheese until smooth. Mix in the pumpkin, sour cream, sugar, pumpkin pie spice, and vanilla. Mix in the gelatin mixture until incorporated.

Pour the mixture into the crust and refrigerate, covered, until firm, at least 2 hours and up to 2 days.

Yield: Makes 8 servings

Our trip to London Markets SLC

Ever since Simon left Britain 2 1/2 years ago, he has longed for certain foods of home. In Salt Lake City, across from Trolley Square are 2 British shops. Today we went into London Markets. This shop sells a bevvy of British Foods, from drinks to custard mixes to kippers as well as British souvenirs. Simon and I have decided we would make a monthly or every two months trip so we can have the goodies we loved so much in England. There is a definite difference in taste in certain things. For instance, the chocolate tastes different. I like many kinds of chocolate but my husband prefers British or German. This shop is really cool. Granted the prices are not very cheap, you pay what is the difference in currency between American and British. However its a fun shop and we enjoyed ourselves. Next time we shall check out the teashop/bakery.

Our week with Chad

My brother Chad has been visiting us this week, also a new member of the Everett family has been born, My brother Denny and his wife have a new baby boy Jonah. During this week Chad has gotten to be with us and we have done a lot of fun stuff. One of the things which my Dad, Joe, Chad and I did was hike in a place called Snell Canyon in Salem. It was a rough hike. We hiked for at least 7 hours and the trail badly needs to be maintained. We went over and under big logs, through tons of bushes and shrubbery, loose rocks and and over many, many leaves. Pictures are at the bottom of this post. My folks didnt think I could do it. However, I did!
I got all the way up to the top and all the way down with no major injuries, just a couple of blisters. I have hiked several times throughout my life. This hike was the toughest though. On our way down we saw the Dream mine part of which is seen above. The people who live around it, sure do keep to themselves, they don't like people coming up there ( even though for us we didnt know that till we got down there) There is a story behind the mine and that can be found on the Internet. We saw a couple of other mines on the way down also. The sheer beauty of the valley was amazing. Another place we went, was Cascade Springs, in the Unita National Park, pictured here. All of our family went,( of our immediate family) including all the nieces and nephews with the exception of Catherine and the new baby. (Pictures will be posted soon) We had a nice time, it was also nice because Simon got to be with us also. My nieces and nephews had a blast at the springs. I enjoyed them also although due to hiking the day before I was quite sore.
Nevertheless, it was a very nice day.
After going to the Springs, we watched the BYU game against UNLV. We won!
After the game we had our first annual Silly Chilli night which was very fun. Back in my ward in Odenton, quite some years back we had a Silly Chilli night as a ward activity and several ward members shared their talents and silly acts, one was my dad and if I am not mistaken, my brother Joe preformed then too. Its been a very nice week with Chad, I wish he was allowed more time off. He will be away for a year on a Army assignment. We hope he will not have to be away too long.

There have been many times when this statement has been true in my life. I have been blessed with friends and family who have been close to me and have watched over me. There have been times when I have been faced with trials, even the possibility of death. I know that without the faith of others praying and fasting for my welfare and behalf I would not be here today. I know its impossible to repay all the kindness and service which others have done for me throughout the years, but I hope to do my best. Most of all I am grateful that we do have a Heavenly father who loves and watches over us. He sent us Son who gave his life for all of us and to me, that is the greatest act of service anyone could do. In a world where so many people try to shut religion out, and become more and more absorbed in their own self importance, its important to dare to buck that trend, and be a light and example to others. A kind word goes far, a kind deed can change lives.

Recipe of the Month

I am by no means a chef but I do like to cook... looking through the latest issue of Real Simple which I like I found a new twist on spaghetti...

Spaghetti with bacon and eggs- Serves 4 ( double ingrediants to serve more)

1/2 pound of spaghetti
8 slices of bacon
4 large eggs
Parmesan cheese
salt and pepper

Cook spaghetti as normal. Keep a 1/2 cup of the water after pasta is cooked ( don't throw that part away) Meanwhile cook bacon in a skillet until crisp. Let cool then break into pieces. Remove and set aside

Cook eggs until whites are set but yolks runny.

Toss pasta with bacon and Parmesan, salt and pepper and the water saved from the pasta.

Place the pasta now mixed in bowls and top with the eggs. Sprinkle Parmesan on top

Ever since I was 12 I have enjoyed a good mystery. I mainly like English mysteries. I don't like true crime or overly gory mysteries. Some is expected in a murder mystery, its all the writing I guess.
some of my favorite authors are P.D. James, Colin Dexter, Ellis Peters, Lillian Jackson Braun, Dorothy L Sayers. and P.G. Wodehouse. Occasionally I will read another author but these by far are my favorites. I occasionally will read Agatha Christie also but reading her is not my favorite form of her work. I like to watch Agatha Christie Mysteries, Miss Marple or Poirot my favorite actor for that being David Suchet. All my favorite English authors have had movies, tv series done. John Thaw is sadly missed as Inspector Morse,series adapted from the books written by Colin Dexter. I also miss Roy Marsden playing Commander Dalgiesh, he is still the around but P. D. James books made in to movies are much better when he is the lead actor, at least I think so.One of my favorite tv mysteries is Midsommer Murders which are based on the books of Caroline Graham who I actually havent read yet, I came across as the tv series. I like to collect them. I am always interested in finding new mystery authors, I find it is a hit and miss thing. However as long as there are mysteries to be solved I shall keep reading. If you have any suggestions let me know. Books I am currently reading are only virtual bookself on the side... The quotes are random and not ones I chose but I thought would be fun to have on the blog...

Before Utah and before Iowa, Simon and I lived in South West London for 2 1/2 years. We lived in a borough of London called Ballam. This is St Mary's church. In the last year we were there, Simon volunteered there and helped people who came over from the Jobcenter next door create their resume's or fix the ones they had. Along with that Simon had his computer repair business. He did work for 2 yrs in Central London at place called the GTC.
which is a smaller version of a Ethan Allen like shop. It also had a wedding registry department which is where Simon worked. I came back in Dec 2005 and Simon joined me 5 months later. While we were there were apart of the Clapham Common ward. We loved to go Sightseeing around London, it was so easy to pop on the tube and go. One of the places we went to for our 2nd anniversary was Hampton court pictured above. It was lived in by Henry the 8th. It has extensive rooms and gardens. It was a lovely day out though typically English- overcast. Other places we went were Syon house, National Gallery of Art, the Wallace Museum, Grenich Martitime Muesum, The Britsh Library... many interesting places.

Hello, We are the Phillips family, Simon Phillips and Carly Phillips. I, Carly Phillips am the creator of our family blog. Our family right now consists of us and our two cats. However I come from the Everett Family. Two of my brothers have blogs also. Simons family are in Wales and Leeds in the U.K.
He is British but is more likely to tell you he is Welsh which is true, 100%. I have Welsh in my family tree.

A little about us: Right now we currently are living with my Grandpa Everett in his basement. Not sure how long that will be. My parents are here too. They plan on building their own home in Apple Valley in Southern Utah. They will be putting their home in Keokuk Iowa for sale soon. I was born in Provo but did not grow up in Utah. I mainly grew up in Maryland in Odenton, Gambrills and then later in Westminster. I also got to spend time overseas. My father worked for the government so I got to live in:
Garmisch
Gotherington
Laie Hawaii

My husband is from South Wales, He was born in Cardiff.

How we met-

Our courtship is a interesting one, but here it is:

When I was living in England with my folks back in 1991-1994, I went to British school, Bishops Cleeve. I was in the 4th year or 10th grade. Simon is two years older than me. He was in the 6th form or 12th grade. Apparently, he had this massive crush on me, wanted to be my boyfriend etc... I had NO clue. I have 1 distant memory of a tall lanky dark haired kid looking at me down the hall once which fits the pictures of him then perfectly, but I never met him then, not the whole time I was in England. He wasn't quite a member of the Church yet. So 10 yrs go by long after I went back to the states, I went to BYUH for 5 yrs, came back to Maryland... Dating was a little tough, not many choices especially since I relied on friends to go the dances and even then didnt see anyone I particularly clicked with. I was 25 and really wondering if I would get married, I dated next to no one at BYUH..
So I thought what the heck I will try a lds dating service- just a trail..
Just a couple days into it and there he was! Ckicked immediately. We had a webcam courtship along with letters, calls etc. He came over in late September 2002, we got engaged and then had a year engagement. On Oct 7, 2003 we were married in the Washington D.C. Temple. We just celebrated our 5th anniversary.

Simon is now a permanant resident, in a few yrs he can take the citizenship test. He likes games, singing, politics, British comedies.. He currently works for Teleperformance. I am a homemaker even though we dont have a house of our own at the moment. I like making cards, walking, crosstiching, British comedies also and mysteries as well as reading, nature.
